FUMARIC ACID
Fumaric acid, also known as ferulic acid, or purple violet acid, with a chemical formula of C4H4O4, is a carboxylic acid derived from butene. It is a colorless and flammable crystal that is soluble in ethanol, slightly soluble in water and ether, and insoluble in chloroform, carbon tetrachloride, and benzene. It is mainly used in the processing of meat and fish products in food. Fumaric acid can be used as an acidity regulator, acidifier, antioxidant aid, pickling promoter, and flavoring agent. This product has a strong buffering effect to maintain the pH of the aqueous solution at around 3.0, and plays an important role in antibacterial and anti mold properties. At the same time, it has an astringent taste and is one of the strongest acidic solid acids with low absorption rate, which helps to extend the shelf life of powder products and other products.
